Tasting

Aspect : Pale pink with a slight fuchsia hue.

Nose: very delicate, candies (crushed strawberry, anglica).

Mouth : A well balanced, refined and harmonious wine with velvety aromas of red berries and ripe pear.

Winemaking

Vintage starts early in the morning whan the outside temperature does not exceed 50°F.

The wine making process is that of pellicular maceration. The grapes macerate at 50°F for 6 to eight hours. This enables the coulour which is in the skin to pass into the juices. Since the aromas are also contained in the skin the whole processis quite tricky because you have to control the coulour whilst retaining asmuch flavour as needed.

Once th emaceration is over thewine goes into vats and the must settles. Once this is over the wine fermentates at 63°C throughout. This means that in spite of usually somewhat high alcoholic degrees the aromas are retained.

This dry and aromatic rosé has a lovely balance between structure and flavour.It also has a velvety charming mouth, quite unusual for a dry rosé.
It is a blend of shiraz and grenache. Once picked it is left to macerate during a whole night before being bled and fermentates at an average temperature of 17° C. This ensures that the wine is always fresh and aromatic.
Its deep pink coulour and its wonderfully rich aromas of red fruits and lollipop should seduce you!
